There is a beehive of activity from both current and future brewers this month, so here’s a recap of some recent news items: Southwest Austin’s Jester King Craft Brewery announced last week that they intend to brew their beer using harvested rain water from the Texas Hill Country (see tanks at right). While the local water content will vary by season for obvious reasons, the brewers expect to use about 10,000 barrels of rainwater per year. Before heading from barrel to brewing, the water will be treated using ultraviolet and reverse osmosis purification processes. Jester King beers are expected to hit local pubs sometime this fall.
